Food antioxidants, explained

Antioxidants are added to stop fats going rancid and colours fading. The useful thing to know is that the word covers two very different groups: natural vitamins like C and E, which are safe, and synthetic compounds like BHA and BHT, which are not. Of the 15 here, 6 are rated avoid and 5 are safe.

The split is about as clean as it gets. On the avoid side are the synthetic antioxidants, BHA, BHT, TBHQ and the gallates, several flagged over possible carcinogenicity. On the safe side are the natural ones, essentially vitamin C and vitamin E doing the same job. When you see “antioxidant” on a label, which one it is makes all the difference.

Are antioxidant additives bad for you?
It splits cleanly by type. Of the 15 antioxidant additives we track, 6 are rated avoid, and they are the synthetic ones (BHA, BHT, TBHQ and the gallates). The 5 rated safe are the natural ones, mostly vitamin C and vitamin E derivatives. Same job, very different profiles.
Is BHA or BHT bad?
BHA (E320) and BHT (E321) are synthetic antioxidants used to stop fats going rancid, and both are rated avoid. BHA in particular has been flagged over possible carcinogenicity, which is why it sits on the avoid list rather than being cleared.
Is vitamin C (ascorbic acid) safe as an additive?
Yes. Ascorbic acid (E300) is just vitamin C, added to stop browning and oxidation, and it is rated safe. Vitamin E (tocopherols, E306 to E309) is the same story. These are the antioxidants you do not need to worry about.
Why do foods add antioxidants at all?
To stop fats and oils going rancid and to keep colour and flavour stable. That job is legitimate. The question is only which antioxidant does it: a natural vitamin, or a synthetic compound with open safety questions.
