E472a — Acetic acid esters of mono- and diglycerides
E472a (Acetic acid esters of mono- and diglycerides), a emulsifier, is rated "watch": fine in moderation. A modified emulsifier in coffee whiteners, baked goods, and dessert toppings. Considered safe by EFSA, but is part of the broader emulsifier-and-microbiome question.
What is Acetic acid esters of mono- and diglycerides?
Mono- and diglycerides modified with acetic acid. Used in whipped toppings, coffee whiteners, baked goods, and frozen desserts.
What does it do to the body?
Your body breaks it back into the acetic acid, glycerol, and fatty acids it routinely processes. Considered safe at food levels; the broader emulsifier-microbiome question applies to this whole family but evidence is strongest for CMC and polysorbate 80.
What regulators say
EFSA's 2017 evaluation found no safety concern. The FDA approves it as GRAS.
Risk rating: Watch
Mixed evidence or a specific concern (gut, allergy, or contested safety data). Not alarming, but worth keeping an eye on rather than eating without limit.
