Food emulsifiers, explained

Emulsifiers keep oil and water from separating, which is how a lot of smooth, stable processed food exists at all. They are also the additive group where the science is moving fastest: a real question hangs over what some of them do to the gut. Of the 31 here, 11 are rated avoid and 16 sit on watch.

The reason so many land on “watch” rather than a clear verdict is that the research is genuinely in progress. Studies on carrageenan and some synthetic emulsifiers point to possible effects on the gut lining and microbiome, but it is not fully settled. The naturally derived ones, like lecithin, look clean. Here is where each one stands today.

What are emulsifiers in food?
Emulsifiers are additives that let ingredients that would normally separate, like oil and water, stay mixed. They keep sauces smooth, stop bread going stale, and give ice cream its texture. Common ones include lecithin, mono- and diglycerides (E471), carrageenan and various phosphates.
Which emulsifiers should you avoid?
Of the 31 emulsifiers we track, 11 are rated avoid, including the phosphates (E339 to E452), carrageenan (E407) and mono- and diglycerides (E471). Most of the rest fall into "watch" rather than "avoid", and a few, such as Lecithins and Sodium, potassium and calcium salts of fatty acids, are rated safe.
Are emulsifiers bad for your gut?
This is the active question. A growing body of research suggests some emulsifiers, particularly carrageenan and certain synthetic ones, may disturb the gut lining and microbiome in a way that could promote inflammation. The evidence is still developing rather than settled, which is why several sit in the "watch" or "avoid" band rather than being cleared outright.
Is lecithin safe?
Lecithin (E322), usually from soy or sunflower, is one of the emulsifiers rated safe. It is a naturally occurring substance found in foods like eggs, and it does not carry the concerns attached to the synthetic emulsifiers or carrageenan.
